Blueberry Citrus Bread
I really like this, especially since the weather is becoming quite gloomy here in little old New Zealand. I made two loaves last night, my husband was on duty onboard ship, so I entertained myself with some innocent baking 😊 Followed by a binge watch of Heroes on Netflix haha, I realised that when it first showed on tv I was at high school, as it played during the same time as my mums favourite program, I only watched tv when my mum was out of the house. I learnt that I’ve only watched 6 episodes of the first series, I really enjoyed it. Upon realising this I quietly thanked my mum. I have 4 series that I can binge watch when Zach works over night!! ❤

Prep t: 15 minutes | Bake t: 1 hr 20 minutes | Serves: 12 slices
1 Tbsp. Maple Syrup
100g Raw Sugar
80g Shredded Coconut
2 tsp Baking Powder
300g Natural Yoghurt (I use Greek yoghurt)
125g coconut oil
2 tsp Vanilla Essence
Orange rind of 1 orange
1C Blueberries (I use frozen blueberries)
160g Wholemeal plain flour
Preheat oven to 180° C, in a bowl combine the sugar, blueberries and maple syrup and set aside. In another bowl combine orange rind, yoghurt and beat in the eggs one at a time, ensuring each one is properly whisked. Mix in the shredded coconut, coconut oil, vanilla essence and then sift in baking powder and flour. Combine the blueberries, maple syrup and sugar mix to the other mix, leave ¼ of the blueberry mix in the bowl. Pour combined mix into the lined baking tray, pouring the last of the blueberry mix on top of the mixture. Bake for 1 hour and 20 minutes. This is an amazingly moist recipe ❤ Trust me when I say this, the bread is amazing!!
